Dr. Abednego Kofi Bansah is an instructional technologist and community nutritionist at Department of Hospitality and Tourism Management, University of Cape Coast.
After completion of Undergraduate and Graduate Degrees in Home Econimics and Human Resource Management at the University of Ghana and University of Cape Coast respectively, Abednego Kofi Bansah further obtained a Masters Degree in Food and Nutrition, and PhD in Instructional Technology from Ohio Univerity in the United States. He has published in peer-reviewed articles related to public health nutrition, social determinants of health and the application educational technologies for curriculum development for face-to-face, online and hospitality education.
